Whats for dinner

I just have to say that Yote made biggo points tonight....dinner loved by all, including friends who take care of Yote dog after event of Sunday :'(

Salmon with simple rub and lemon juice (one filet) and then salmon with creamy chardonnay (other filet), orzo salad with red, orange and yellow peppers and onions, green beans with olive oil, fresh bread with rosemary and herbs and lemon drops and red stripe on the deck.....Yote howling tonight baby ;D

Not much of a recipe tonight Sissy....I was just wingin it and mixing ingrediants and it all turned out perfect.

sauteed onions, red, yellow and orange peppers with merlot was perfect...added a lil rosemary, salt and pepper...perfect.

Dang it!  I hate when people say "wing it"...I need step by step instructions and even then it's 50-50 whether anyone will eat it.

Just remember with salmon generally less is better.....don't really have to add much for a tasty dinner.  We al love veggies, so beans (steamed) and peppers on top of orzo was perfect.

Salmon Sauce - mix this up and heat in a sauce pan.  Pour over grilled or broiled salmon.  I wing this one and just dump in a pan so quantities are a guesstimate.

3-4T Butter
1T Catsup
1T Soy Sauce
1 1/2 t yellow mustard
1/2 - 1 t lemon juice
Add a splash/dash of garlic powder, worchestershire sauce, black pepper

Another great way for salmon is to put it in a pan and coat it with fine chopped pecans and drizzle with honey then bake/broil until done (stick a knife in it and it looks pink not raw thru).

Have your kids watch Top Chef then you will have lots of interesting things for dinner - this show sends my kids running for the kitchen.

Yote, or anyone for that matter, I have a recipe that has won a couple awards I came up with. It's done on the grill. I think I still have a copy of it somewhere. If anyone wants it I'll be glad to send it. Pretty simple to make. Kind of a sweet, smoky style of grilled salmon.

don't forget, since this is top secret, after you try it, you have to, you know, do the Tom Cruise thing,,,

Top secret barbeque salmon recipe;

1 side, entire half of salmon with skin, deboned.

Marinate with 6-8 hours in a bowl or baggie;

2 cups water, (or white wine, beer, apple juice)

½ cup  soy sauce

½ cup brown sugar

½ cup white sugar

¼  cup salt

adding whatever flavors you prefer, ie; Cajun

seasoning, lemon pepper, dill, oregano, etc.

After fish is marinated throw away marinade and

let fish dry. Mix ½ cup brown sugar with a

tablespoon ea of garlic powder and onion powder

with just enough water to make a paste. Smear the

paste over the filet.

Fire; in my Weber I get an entire chimney full of

Briquets. When the whole thing is roaring red I

dump it in the Weber. It is a hot fire.

Construct a filet sized tray out of a double piece of

foil, Turning up the edges to prevent any liquid

from leaking. Lay filet skin side down on foil.

Throw 2 large handfuls of alder chips, or alder

dust onto the fire, put the filet in the middle and

close the lid. The fire should smoke heavily.

Check the filet in 15 minutes, do not open the

Weber before that. Flesh should all be firm to the

touch. Pull the foil boat onto a large plate or pan.

You should be able to slide a spatula between the

burnt on skin and the filet with the whole filet

sliding off onto a serving plate. ENJOY !!!

-Get one used car.  Add yourself into it.
-Turn engine over until car starts.
-Apply just enough pressure on gas pedal so as not to go too fast but to keep up with the current flow.
-Arrive at Ken's house.
-Knock on door......If no answer, go around back and try back door.
-Once in, Drink beverages and enjoy BBQ Salmon.

Ritz, you always have good recipes...is Top Chef your secret?  And how on earth do you find the time? :)

Note all my recipies are super easy (I did spend 2 years in cooking school and worked my way thru college as head cook at a summer camp feeding 600 a day - that is a whole different type of cooking, can you say government peanut butter yum yum).

It's one of my personnal goals to have a family dinner as often as possible, we do fairly often sometimes it's at 4 sometimes it's at 9.  It's just hard when kids are so picky and I refuse to make them their own food - usually have 1 coarse that they like (potatoes).

Tonight it is grilled steak (thick) with bacon and onions on top, salad on the side, with a nice merlot.

Sissy good reach into the way back file.  Yote has been in a week long garage cleaning advneture...amazing what you find when you hear those little squeeks out in the garage.  Maybe I need Brat's cat.  Anyway, just about done and could be in for a good meal as it has been mostly soup and sandwiches this week.  I will keep you posted.

Spaz kitty would help Yote. She is just at that age where if it moves, she pounces!
Varmint would let it go right by her.. and Bubba ( the dog ) would also help but you might have to re-do your garage after that. She goes NUTS over critters
